RED CURRY DUCK with Pineapple and Tomato
1 Tbsp P.H.A.T Foods Red curry paste
200 ml coconut cream
1 Luv-A-Duck Roasted Duck Breast (sliced 1cm thick)
1 medium sized tomato quartered
2 - 3 Tbsp peas (frozen will do)
2 Tbsp tinned Pineapple slices plus 2 Tbsp tinned syrup.
1/2 small carrot, peeled and sliced thinly.
In a saucepan, bring coconut cream, 100ml water, curry paste, pineapple and
vegetables to the boil. Simmer for 1-2 minutes. Add duck breast and simmer until
curry sauce thickens slightly plus duck is warmed through - (approx 3 mins).
Serve with steamed rice. If you like stir, just before the curry is finished in
some Thai basil leaves through for a more traditional flavour.
